原來，黃豆最主要的化學成分是蛋白質。蛋白質是由氨基酸所組成的高分子化合物，在蛋白質的表面上帶有自由的羧基和氨基。由於這些基對水的`作用，使蛋白質顆粒表面形成一層帶有相同電荷的水膜的膠體物質，使顆粒相互隔離，不會因碰撞而粘結下沉。
點滷時，由於鹽滷是電解質，它們在水裡會分成許多帶電的小顆粒——正離子與負離子，由於這些離子的水化作用而奪取了蛋白質的水膜，以致沒有足夠的水來溶解蛋白質。另外，鹽的正負離子抑制了由於蛋白質表面所帶電荷而引起的斥力，這樣使蛋白質的溶解度降低，而顆粒相互凝聚成沉澱。這時，豆漿裡就出現了許多白花花的東西了。
鹽滷裡有許多電解質，主要是鈣、鎂等金屬離子，它們會使人體內的蛋白質凝固，所以人如果多喝了鹽滷，就會有生命危險。
